As luck would have it, I found wheat bulghur the day after I made the couscous version. Yesterday I made a new batch:

Compared to the couscous, this has more of a grain look to it. The taste and texture is also a bit different as well. One cup of dry bulghur yields about three cups cooked. It doesn't have quite the granular taste of the couscous and has a slight chewiness to it. I prefer the traditional version, but both are good in their own ways.
